I've read the FAQs and searched the help center.
My URL is: www.cortizza.com
The number of structured data items for my site has been close to 300, but today, suddenly declined to 39! I have not made any changes. Any idea what is going on? Thanks for any help!

It seems that you are not following Google's guide lines when not marking up visible content (for your human visitors) but adding the markup merely in invisible meta tags:
Moreover, you are scoring an own goal here as your meta markup says 0 rating count while you actually have a 5-star rating on that particular item page already. Note that Google does not only drops rich snippets from displaying in SERP for this but might even penalize your site for using markup that is not true. Please, read (especially the "quality guide lines"):
In your case, everything is there so you should just add the markup to visible content. Meta tags are also allowed but only for dismbiguation for bots like price currency or date/time in ISO format etc.

I actually had the same issue come up today as well. We've had about 400 structured items, but then all of the sudden today it dropped to 14. That can't be a coincidence right?

Exactly the same has happened to me. On June 6 Google Webmaster Tools had recorded 2316 Items of Structured Data. Today it has suddenly dropped to 209. There have been no site changes.

Thanks for your input, Gaieus. But, no changes have been made to the mark up. It has always been this way and has been working fine. I'm really not sure how to even change it in the way that you suggest. Unfortunately, the product ratings don't show in the snippet due to a problem with the software - the vendor, yotpo.com, has told me it is a known limitation that they are working to fix. Sounds like others are having similar problems...

Well, what I know (from experiance and by word) is that Google is cutting back with displaying rich snippets and they are taking the guide lines more and more seriously. More excatly, up to date it has more or less been an experimental term and the algorithms are getting ever better at screening out markup that's against the guide lines.
Now if the review markup of the software does not work, at least remove that part from the markup because it's evidently false and can be spotted at the first sight.
