Explain your issue in full detail here:
I read that as long as "advanced IMAP controls" was enabled I could disable certain emails being sent by disabling "show in IMAP". I can't find "advanced IMAP controls" in the labs and unchecking/disabling "show in IMAP" is not working?

Advance IMAP controls have graduated from being a lab to being something permanent in Gmail. This is automatically set. So go to Mail Settings > Labels, and disable the folders that you do not want to see.

I tried that - I have unchecked (disabled) the label I do not want to be sent to the phone, but it hasn't worked - I am still receiving all emails?

Did you refresh your folders in IMAP settings on your email client, which you have not specified.

I'm sorry I do not know how to do this or what you mean. I am trying to use Gmail on my iPhone through the mail option provided by iPhone

In Labs I do not have an Advanced IMAP Controls option

Skip that step. As I said in my first post, Advanced IMAP Controls are already enabled.

If start at Step 4: which tells me to go to Labels and unclick the "show in IMAP" -I've done that, but I am still receive those labeled emails on my iPhone.

Are you using IMAP or "Exchange" (Activesync) to access Gmail from your iPhone? The IMAP controls do not apply to Exchange connections.

When you added the account to you iPhone, did you add it as a "Gmail" account or "Exchange" (or "Other")? (You should also be able to tell from the account settings on the iPhone, or, possibly, from the account activity in Gmail.)

I've done both, but went back to the provided Gmail account vs "other" because I assumed "other" was more for POP settings?

What I don't understand is why when unchecking "show in IMAP" the emails STILL come through?!? What am I doing wrong here???

"Other" can be used for either POP or IMAP setup, but, if you used "Gmail", it will be IMAP, not Exchange.
Let's take it back a level. After you cleared the "Show in IMAP" box, it should have removed the coresponding folders from the Mail app on the iPhone, along with the messages inside. But, if the messages have another label, like "Inbox", or if you are showing "All Mail", they will still get downloaded.
So, the question is, can you still see and select the folders for the labels you have chosen to hide from IMAP?

Thank you for backing up...I clearly have no idea what I am doing!
After I cleared the "show in IMAP" box it did not remove the corresponding folders from the Mail app on the iPhone - how long does the process usually take? I took a look at the labels/filters I have set up in Gmail and the label I have set up does not have another label attached, I have even cleared the "show in IMAP" for "all mail" just in case.
And still...for some reason I can still see all my mail on the iPhone even though I have chosen to hide from IMAP??
