I am using Google chat in the browser or through iChat. I toggled "Never save chat history." in the settings but it seems that Google Chat retains the last 10-20 messages in the chat window (not the whole conversation), even when I log out, sign out of chat, etc. I set my iChat to not to save the chat history which it does, but the last messages sent in chat appear in Gmail in the browser.
Is there a setting to avoid the retainer of the last messages sent.
I am on a Mac, 10.7, using Chrome and Safari.

You should be able to resolve this by first making sure that you've chosen to chat "off the record". This can be done from the Chat window itself or from Chat settings. Once that's taken care of and you're chatting with someone, you'll close the Chat window by "x"ing out and then refresh your page. The Chat windows should then be clear.
You must take those steps, in that order (be chatting off the record, close out the chat window, and refresh the page) for this to clear.

Have a look at this thread, it's been going on for some months now. Carrying cross operating systems and platforms too. Seems Google is storing stuff in their Cloud Service....

Thanks for this, it does help if I am using the chat within my gmail window BUT if I use a client (GoogleTalk) or my phone then the history is still retained. There seems to be some server side persistence going on! Any idea when this bug will be fixed? As mentioned in the other thread and by many other users this has been ongoing for months. It is not how it use to be, something changed!

Do you ever see remnants of old chats in GTalk that are left over from phone chats or vice versa? Or do you just have GTalk remnants come up in the next GTalk session and phone remnants come up in the next phone session?

I only tried GTalk this week for the first to see if it would fix my issue! Prior to that I had used the chat within my GMail and clients on my iPhone or Android tablet. I have used a mobile device at night and then logged in on a browser the next morning on a desktop(both Windows & Mac) to see the conversation I had the night before still there. So the chat on my phone persists across to my browser. I've been trying to explain that to folk unsuccessfully.
I only log in on 1 device at any one time, but conversations I have on my mobile devices will appear when I next log in on a desktop browser, regardless of the OS (Mac or PC) or the browser (I've tried various browsers too) This wasn't a problem before until the latter part of last year, I used to simply hit F5 and my chat vanished.
I have always had my settings to never save history and my chats are 'Off the record'

Unfortunately no ideas, I just wanted to clarify your claim that the carry over is server based, not client based. Your explanation has made that crystal clear, thanks.

Thanks anyway Keith, I'm hoping that it's an issue that gets resolved soon otherwise I'll have to look at using another means for IMs and I loved the ease of using Chat within my email... Sad times :(

"Never save history" is exclusive to your own account, only. History will still be recorded in the friend's account unless you take the individual conversation "Off the record", in which case it is no longer recorded until EITHER ONE of you disables it. Either one of you can enable or disable the feature at any time, and you both also receive a notification that it has been enabled/disabled.

Oh, and the notification... I don't believe that ever shows up in 3rd party clients. Nor the ability to enable/disable the feature. You must be using the official gtalk client or the one integrated into gmail.
