How can I allow other people to upload videos into my YouTube account?

You would have to grant them complete access to your account; username, password and potentially access to the e-mail address on file for the account.
 
... and hope they never abuse that access.      :\

That is of course possible but not what I want. I want them to access my account with restricted access with their own account.

There are no "restricted access" options. Your account is your account and you are responsible for everything in it. Allowing someone else to access it, even with limitations, would open the "I didn't do it" can o' worms.

Nope, wouldn't matter. You are and always well be held personally responsible for content on your channel, regardless of how it got there. Copyright strikes, for example, are posted against the user, not "whoever might have uploaded the video to my channel."
 
You may be able to "fight" such strikes against your account, but as plenty of others in these forums can attest to, good luck with that.

To give you the benefit of the doubt, if you can find a YouTube help page that states if you claim upfront that someone else, whom you've granted access to your account, has posted a video and that that absolves you of all responsiblity for that video, point it out for us.
