I have been using outlook and have downloaded all my folders to a thumb drive. How can I make the folders now appear as labels in gmail.

Connect Outlook to gmail via IMAP and then copy the folders over to gmail.

How about if I have more than 200 folders with sub-folders and more sub-folders? your method is crashing my outlook, is there a easy way to do this?

No, I don't believe there is any easy way to do it. But I've had some luck moving very large outlook accounts over to gmail by carefully doing it a little at a time.
There are some other solutions like "Gmail loader" (GML), but I don't think they work any better than the manual method I've suggested. Google also provides the "google email uploader" but it only works for google apps accounts, not standard gmail accounts.

In doing the IMAP transfer described above, what happens to the message dates? Will they all keep the original dates or will they all get the new upload date? Thanks!!
