Sometimes folks send emails with no subject or an outdated subject line, which makes finding that email hard once I've moved it to a label with a lot of other emails in it. Any help much appreciated.
I use OSX.4
I've tried manually deleting the (no subject) header, but GMail won't allow me to do that.

You cannot do that. You can only change the subject line when you forward or reply to.
Suggest a feature:
Gmail Help › Suggest a Feature (in the "Help resources" box on the right)
Use the "I have another idea" menu at the bottom.
