If your Analytics account is linked to your AdWords account, the time zone for your Analytics account is taken directly from your AdWords account. In this case, you will not be able to change your time zone in your Analytics account alone. If you want to change the time zone in both your accounts, you can contact the AdWords support team and ask them to change the time zone for your AdWords account. Changing your time zone in your AdWords account will automatically change the time zone in your Analytics account.

So how am I suppose to fix my time zone if I can't reach anyone at Google?

Ok two bugs here:
1. When I created my website profile, I unchecked the box "Cost data from Adwords Account"
However, it seems that my profile is still linked to the AdWords account, as I don't see the "Change Timezone" in analytics settings.
2. So, Analytics says my timezone is "Pacific Time (-7:00)".
As I live in Brazil (GMT -3:00), I opened my Adwords account (created in 2007) and checked my timezone... And surprise!
My AdWords account is GMT -3:00, while my Analytics account is GMT -7:00!
As I use these products for some years now, and they both have been extremely updated (for the best), I believe this setting may be corrupted at one of these updates...
I just submitted the form from the link above, but I'm really not confident that anyone will take a look at it.
So, any other suggestions?

Ok two bugs here:
Did you want the two accounts linked? They can be linked without the cost data being imported. I often create new profiles under an website analytics account and dont apply cost data if i am testing filter setups or something where the adwords costing isnt important to the data being collected
If you are wanting to unlink your accounts please see below (keep in mind though this will unlink the whole applicable analytics account, not just single profiles within an analytics account)

In some cases, just choosing a country from the drop-down menu right above the time zone ("Time zone country or territory") enables the time zone to be edited too.

Just to help who's having the same problema:
I was actually reffering to a bug, not to a user's choice...
Accounts WERE linked, and timezone WERE different on each service.
However, I followed the link "Whims" posted above, to unlink my analytics and adwords account.
Then, I linked them again and everything started to work fine. Probably some cache or index file needed to be rebuilt.
