If you have shared your spreadsheet with someone with EDIT rights, the person with EDIT rights can make all the changes to the spreadsheet just as you, the owner, can. So if you want to prevent a person from EDITing your spreadsheet anymore, you have to go and change the rights for that person from
Can edit to Can view
