Don' t give up - it works definitely. For example for my own website the custom segment is:

  Medium   Condition: Matches exactly   Value: organic
  and
  Keyword   Condition: Does not match regular expression   Value: webfield|gummersbach

saved as segment "Generic SEO traffic" and activated in the reports (alone, without "All Visits").
